8 C diced potatoes
1/3 C chopped onion
5 1/4 tsp chicken boullion powder or cubes
5 C water
1 can cream of chicken soup
1/4 tsp pepper
1 package cream cheese, cubed (add after cooking)
Cook in crockpot on lo-med heat for 4-6 hours. Before serving add cream cheese and stir into soup.
Serve with crumbled bacon, cheese, sour cream and chives.
This can also be prepared on the stovetop. Cook potatoes and all other ingredients except cream cheese til potatoes are tender, add cream cheese and stir until blended into soup. Serve with toppings as above.
